Résumé: Post-harvest losses of agricultural products in Africa in general remain a real problem in the agricultural sector. The drying of the latter is of particular interest in the food industry, it allows the long-term preservation of food in order to make it available even in the off-season. Among the foods that can be dried and preserved we denote the tomato, Cameroon produces 932,530 tons per year and this fruit is consumed extensively by both rural and urban populations, so this is gaining more attention over time. Its use in industry does not go unnoticed, thus, studies are being developed to make its exploitation on an industrial scale, it is in this context that the object of our study is inscribed, namely "Study and realization a tomato powder production oven”. This work aims to contribute to methods of preserving food products by drying, through the construction of an oven for agricultural products. The device is capable of drying (water content 8%) 2000 kg of crushed tomato in 4 hours. An air extractor is imposed in the dryer chimney, which both sucks in the air which is preheated, but also removes the air laden with humidity that has passed through the product. Software such as SolidWorks and AUTOCAD were used for dimensioning and realizations in 3D and 2D. A manufacturing study was carried out on some of the parts that make up our system, and the user guide was made available. The equipment has the capacity to dry seeds and the estimated cost of the project is nine hundred and thirteen mil (913,000) FCFA.
